Cooking With Maple

Katie Webster
/
From "Maple: 100 Sweet and Savory Recipes Featuring Pure Maple Syrup"
Katie Webster says that cooks can look beyond traditional fare like fudge and glazed carrots to a wide variety of recipes that include maple syrup - including this smoky and sweet turkey chili.

Maple syrup has a place in many Vermont kitchens - and it can be used for a whole lot more than topping pancakes and making candy. We're exploring the world of cooking with maple with the help of a big new cookbook. There are some recipes you might expect - fudge and glazed carrots, but also soups, cocktails, desserts, meat, fish, and more - all with a maple kick.

Katie Webster joins us to talk about it all. She's the author of "Maple: 100 Sweet and Savory Recipes Featuring Pure Maple Syrup." She's bringing two dishes to the studio today: a maple chili and a maple apple almond torte, you can clickhere for the recipes.

Post your questions or comments - or your own recipe suggestions - here or email them to vermontedition@vpr.net.

Also on the program, many Vermont lawmakers had concerns over the multinational Trans-Pacific Partnership Trade Agreement. Now after participating nations reached a deal earlier this month, we're checking in with Senator Ginny Lyons on her thoughts on recent developments.

And Live From the Fort features The Sweet Remains.
