The latest in Vermont grown food is cooking oil. Yes, cooking oil - a fledgling industry producing sunflower and canola oils. Full Sun in Salisbury is producing several hundred gallons of oil that is being sold to farms and food hubs to include in CSA shares for their members. Butterworks Farm in Westfield is also getting into the business.
Refining oils takes hundreds of pounds of seeds, so this new venture is creating new crop opportunities for Vermont farmers. Candace Page, who writes for the Savorvore Section of the Burlington Free Press, explains how Full Sun and Butterworks farm got into the business and the special touch these oils add to cooking and salad dressings.
