Vermont likes to consider itself the center of the farm-to-table movement today, but that way of eating was a way of life for each new ethnic group that settled this area.
Those traditions are explored by the Burlington Edible History Tour, a two-mile walking tour through the city that was founded last year by Gail Rosenberg and Elise Guyette. It is conducted on Thursday, Friday and Saturday from May through early October.
The tour makes stops at several restaurants and historical sites and begins at the ECHO Lake Aquarium and Science Center, where participants are asked to introduce themselves and share their ethnic background and food traditions.
