VPR Cafe: 'Incubator' Hosts Pop-Up Restaurants In Winooski

A new space in Winooski called Incubator has a pretty simple idea: be a place for people to get creative with food.
Misery Loves Company, another restaurant in downtown Winooski, owns Incubator. Individuals or organization can rent the small restaurant space and sell their food for a night. The cost to rent is either a flat $100 or 10 percent of the sales for the night.

"Eighteen people or organizations have used it since it opened earlier this year," said Sally Pollak, a writer for the Savorvore Section of The Burlington Free Press. "Some use it every other week and others have used it on a one time basis. It's really getting its footing."

Pollak said that mainstays so far have been tacos, Polish and Caribbean food.

The VPR Café is made possible by Otter Creek Kitchenware in downtown Middlebury, offering over 70 lines of kitchenware.
